The red stuff all over the food (and all over their fingers and mouths) is from a “fruit” that grows here. You can look up “pandanus” if you’re interested in learning more. The short explanation is that they cook the fruit (with lots of seeds in it), mash it with some water and squeeze the resulting greasy juice over their food (sweet potatoes, taro, or other things). It looks kind of like ketchup but doesn’t taste anything like it! You can always tell when someone has eaten it because the red stains their fingers, mouths and teeth for a while. Our Amdu friends love it!
