{"id":175,"date":"2009-07-31T00:00:00","date_gmt":"2009-07-31T04:00:00","guid":{"rendered":""},"modified":"2009-08-29T02:48:09","modified_gmt":"2009-08-29T06:48:09","slug":"baileys-july-and-august-recipe","status":"publish","type":"post","link":"https:\/\/blogs.ethnos360.org\/brian-pruett\/2009\/07\/31\/baileys-july-and-august-recipe\/","title":{"rendered":"Lemon Cake"},"content":{"rendered":"<p><!--StartImportPhoto--><a href=\"https:\/\/blogs.ethnos360.org\/brian-pruett\/files\/2009\/07\/2297_59831.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-104\" style=\"margin-right: 10px;margin-bottom: 5px\" src=\"https:\/\/blogs.ethnos360.org\/brian-pruett\/files\/2009\/07\/2297_59831.jpg\" alt=\"\" width=\"288\" height=\"216\" \/><\/a><!--EndImportPhoto--><\/p>\n<h2><span class=\"bigText-red\"><span style=\"font-family: mceinline\">Lemon Cake<\/span><\/span><\/h2>\n<p><span class=\"boldText-red\">This recipe was taken from <span style=\"text-decoration: underline\"><a href=\"http:\/\/www.foodnetwork.com\/recipes\/ina-garten\/lemon-cake-recipe\/index.html\" target=\"_blank\">Foodnetwork.com<\/a><!--more--><br \/>\n<\/span><\/span><\/p>\n<p><span class=\"boldText-blue\">Ingredients:<\/span><\/p>\n<p>2 sticks unsalted butter, at room temperature<br \/>\n2 1\/2 cups sugar, divided<br \/>\n4 extra-large eggs<br \/>\n1\/3 cup grated lemon zest (6 to 8 large lemons)<br \/>\n3 cups flour<br \/>\n1\/2 teaspoon baking powder<br \/>\n1\/2 teaspoon baking soda<br \/>\n1 teaspoon salt<br \/>\n3\/4 cup freshly squeezed lemon juice, divided<br \/>\n3\/4 cup buttermilk<br \/>\n1 teaspoon vanilla<\/p>\n<p><span class=\"boldText-blue\">For the glaze:<\/span><br \/>\n2 cups confectioners&#8217; sugar, sifted<br \/>\n3 1\/2 tablespoons freshly squeezed lemon juice<\/p>\n<p>1. Preheat the oven to 350 degrees F and grease and flour 2 loaf pans.<\/p>\n<p>2. Cream the butter and 2 cups sugar until light and fluffy, about 5 minutes.<\/p>\n<p>3. With the mixer on medium speed, add the eggs, 1 at a time, and the lemon zest.<\/p>\n<p>4. Sift together the flour, baking powder, baking soda, and salt in a bowl.<\/p>\n<p>5. In another bowl, combine 1\/4 cup lemon juice, the buttermilk, and vanilla and add the flour and buttermilk mixtures alternately to the batter.<\/p>\n<p>6. Divide the batter evenly between the pans, smooth the tops, and bake for 45 minutes to 1 hour, until a cake tester comes out clean.<\/p>\n<p>7. Combine 1\/2 cup sugar with 1\/2 cup lemon juice in a small saucepan and cook over low heat until the sugar dissolves.<\/p>\n<p>8. When the cakes are done, allow to cool for 10 minutes. Remove the cakes from the pans and set them on a rack set over a tray or sheet pan; spoon the lemon syrup over them. Allow the cakes to cool completely.<br \/>\n<span class=\"boldText-blue\"><br \/>\nFor the glaze:<\/span><\/p>\n<p>1. Combine the confectioners&#8217; sugar and the lemon juice in a bowl, mixing with a wire whisk until smooth. Pour over the tops of the cakes and allow the glaze to drizzle down the sides.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;ve been on a search for new recipes that use only the ingredients I can easily get here.
