Unfortunately they only offer it seasonally. So&nbsp;he set out to find a recipe for it so that we could enjoy sweet potato casserole any time of the year.&nbsp; (They are good for you!)<\/p>\n<p>Ingredients <br \/>3 cups mashed sweet potatoes <br \/>1 cup brown sugar <br \/>2 eggs, lightly beaten <br \/>1\/2 teaspoon vanilla <br \/>1\/2 teaspoon nutmeg <br \/>1\/2 teaspoon cinnamon <br \/>1\/2 cup milk <br \/>1\/2 cup melted butter <\/p>\n<p>Topping: <br \/>1\/3 cup brown sugar <br \/>1\/3 cup flour <br \/>1\/4 cup melted butter <br \/>1 cup chopped pecans <\/p>\n<p>Instructions <br \/>Peel and cube the sweet potatoes. Boil them in water until they are tender enough to pierce with a fork. Drain and mash. <\/p>\n<p>In a large bowl mix the sweet potatoes, 1 cup brown sugar, eggs, vanilla, spices, milk and melted butter. <\/p>\n<p>Pour the sweet potato mixture into a buttered 2 quart casserole dish. <\/p>\n<p>Combine the topping ingredients and sprinkle over the sweet potato mixture. <\/p>\n<p>Bake in a pre-heated 350 degree F oven for 40 to 50 minutes. The center will be almost set when done.
