Tapioca Roll-Ups

The truth is I actually don’t know what these are officially called, but they make a really good snack.

They also make a good “cultural event” as we like to call it in NTM, and a good language lesson, and a good opportunity for new friendship.

This is Ivanete, who is in charge of hospitality at the NTM property here in Manaus.  She is forever cleaning and washing and working hard for all of us who use the mission buildings and for all of the guests who come through the guest house.  But she still had time on a Thursday afternoon to have me in her house so she could teach me how to make tapioca roll-ups.

It’s easy.

We made some salty with butter, and others sweet with a drizzle of sweetened condensed milk.

Kiki likes the sweet ones best…(who knew?)
