Recipe of the month – June

     Many of you have asked me for this recipe, so here it is!  Enjoy!  If you decide to try them, let us know.

 

 

 

Bran Muffins  

1 C. bran

1 C. plain yogurt

1/2 tsp. salt

1 tsp. baking soda

 

1 egg

1/2 C. brown sugar

1/2 C. oil

1 C. flour

 

Optional : Use 1/2 c. whole wheat flour and 1/2 c. all purpose flour.  These are also great with dried cranberries, blueberries or raisins mixed in.  This is an easy recipe to double or triple if you’re making them for a big group. 

  

1) In one bowl, stir together the bran, yogurt, salt and baking soda. 

2) In another bowl, beat together the egg, brown sugar, oil and flour.  (mixture will be thick)

3) Combine the two mixtures.  (Add the dried cranberries here if desired)  Fill muffin cups 3/4 full.  Bake at 350 for 20 – 25 minutes.  Makes 12-15 muffins. (or lots of mini muffins!)

4) Try not to eat them all in one sitting!  They taste great with a little butter, some jelly or just plain too.  Yum!
