Stuffed Jalapeno Poppers

Stuffed Jalapeno Poppers

Ingredients:
1-2 packages cream cheese softened slightly
2-4 garlic cloves minced
1/4 cup chopped sun-dried tomatoes
Chopped fresh/dried basil
Pinch of salt
10-25 jalapenos
1/2 to 1 lb bacon
Toothpicks
1.  Preheat BBQ.
2.  Mix cream cheese, garlic, tomatoes, and basil.
3.  Add salt and mix until soft and manageable.
4.  Slice each jalapeno lengthwise on one side.
5.  Optional; remove seeds (for slightly less spicy poppers)
6.  Insert a liberal amount of filling into each jalapeno. (I’ve found it works best to put the cream cheese mixture in a Ziploc bag and cut a small corner off – like a pastry bag – and use that to fill the jalapenos.)
7.  Wrap each pepper with 1-2 strips of bacon and secure with a toothpick.
8.  BBQ until lightly roasted and bacon fully cooked.
