We’d finally fixed our grill and wanted a taste of home last night. We feasted on kofta burgers, fatush, and hummus!
I took this recipe from: http://allrecipes.com/recipe/kofta-kebabs/. You can either make these on skewers or just form them into burgers. This recipe is legit–I think it tastes totally authentic!
1 pound ground lamb or beef
4 cloves garlic, minced
3 tablespoons grated onion
3 tablespoons chopped fresh parsley (or 1 TBS dried—fresh is much better)
Spice mix:
¾ – 1 teaspoon kosher salt
1 tablespoon ground coriander
1 teaspoon ground cumin
1/2 tablespoon ground cinnamon
1/2 teaspoon ground allspice (or nutmeg)
1/4 teaspoon cayenne pepper
1/4 teaspoon ground ginger
1/4 teaspoon ground black pepper
Mix all of the spices together (so they evenly disperse), dump on top of meat, add all of the rest of the ingredients. Mix with your hands, form into shape. Let rest for 10-30min. If you do use skewers, soaked them in water for 30 minutes before using. Cook and Enjoy!
Sometimes I make the spice mix in bulk. You use 2TBS and 1 3/4 tsp per pound of meat.
