Well, given that we should be on the other side of the world within the next year, I’ve decided it’s probably best to start wrestling with “scratch cooking” now while we’re still in the States. I figure there will be enough stress and pressure when we get to the field that I don’t need to face it in the kitchen as well. I’m not exactly sure what I will have access to but I do know there will be no boxed dinners, frozen lasagnas, or In-n-Out. Plus, I also heard that a dozen eggs – yes, 12 eggs – are priced around $6 right now. And this family will easily go through 10 eggs on any given Saturday morning. Anyways, all this to say, I’ve been experimenting with homemade everything – bread, tortillas, muffins, biscuits, pancakes, applesauce, pasta sauce, refried beans, etc. But my favorite homemade something that I just discovered is yogurt! It is so easy and what’s more, plain yogurt can be turned into sour cream, cream cheese, veggie dip, an ingredient for pasta sauce, and all sorts of white creamy things! Plus, I discovered that it is simple to make with powdered milk (yup, that’ll be a switch). Anyways, just thought I’d share with you all the sorts of things I’m wrestling with while Brent does all his crazy flying. Let me know if you think of anything else I should try to make!

Wow, Erica, you are becoming a pioneer woman! Perhaps you could experiment with homemade granola. It would be great with your yogurt. I make my own yogurt too so that I can control the amount of sweetness and add my own fresh fruit. Thanks for the Christmas kitchen towel! Have a wonderful Christmas.
